I would like to adjust the width of my website’s content, as I don’t want it to stretch all the way to the edge of the screen when the site is viewed on a desktop. I have looked into tables and padding, but these options would also reduce the width on mobile devices.
How can I adjust the content width on the full site, without reducing the content width on mobile?

Section: change background into white, change textcolor into your color.
Content Within sections you can add text, columns + text, and other shortcodes
Your webdesigner was not consistent in using this option.
Per example; your home page (white content block) is not placed within section (example above)
Therefore you content is not aligned properly on a full width page.
